Description:
Over 500 head of contented cows grazed the Delta Islands. Their combined output averaging 2,500 gallons a day which nurtured thousands of children in San Francisco and Oakland. Farmed initially by mid-west emigrant farmers, Germans and Scandinavian immigrants soon established orchards and dairies in the Eden Plains, Iron House area and Hotchkiss tract areas. By 1900, the San Francisco San Joaquin Railroad came through town stopping with mail and picking up milk cans bound for Oakland 3 times a day, every day. By 1916, celery production rivaled milk production. George and Christine (née Christensen) Knight established a depot. The town of Knightsen, named as a combination of the founder’s last names of Knight and Christensen, was born.
